It is not defined by air temperature alone, but by controlled heat removal from the product. This presentation explains the technical fundamentals of heat transfer in controlled freezing: convection at the product surface, conduction from core to surface, temperature gradients, freezing fronts, latent heat removal and crystallization behavior.
